  • 1 cup granulated sugar
  • 2 large eggs, beaten
  • 1/2 tsp vanilla extract
  • 1/2 cup canned crushed pineapple, drained
  • 1 cup grated carrots
  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon

For the Frosting:

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup powdered sugar, sifted
  • 1 (8 oz package) cream cheese, room temperature
  • zest from 1 large orange
  • 1/4 tsp kosher salt

  1. Heat oven to 350°F, and generously spray an 8×8-inch square pan with non-stick cooking spray.
  2. In a large bowl, with a wooden spoon stir together the oil, apple sauce, and sugar.
  3. Add the eggs, vanilla, pineapple, and carrots.
  4. In a separate bowl, mix together with a whisk the flour, baking powder, baking soda, and cinnamon. Combine the dry ingredients to the wet and stir until combined.
  5. Pour the batter into the prepared pan, and bake for 25-30 minutes, until nicely golden brown and starting to pull away from the edges.

  7. As the cake cools you can start making the frosting.
  8. In the bowl of an electric mixer fitted with a paddle attachment, combine butter and powdered sugar. Beat on medium-high speed until completely smooth and glossy.
