Refrigerated tortellini is coated in saucy lemon butter and tossed with sundried tomatoes and baby spinach. It all comes together in a GoodCook Cast Iron Skillet, so there’s less mess and no fuss.   • 1 stick CHALLENGE butter
  • 1 Tbsp crushed garlic
  • 20 oz refrigerated tortellini
  • 1/3 cup lemon juice
  • ¼ cup diced sundried tomatoes
  • 2 cup baby spinach
  • salt and pepper, to taste.

directions

  1. In a large skillet, melt butter on the stovetop. Add garlic and tortellini. Cook for 1-2 minutes, then add lemon juice and sundried tomatoes. Cover and allow to cook for 5 minutes over medium-low. Stir in baby spinach. Salt and pepper, to taste. Serve and enjoy
