  • 1 Tbsp osher salt
  • 2 lbs boneless skinless chicken thighs


  • 4 Tbsp avocado oil
  • 1 yellow onion diced
  • 2- inch ginger finely diced
  • 6 cloves garlic sliced
  • 1 tsp Salt more to taste
  • 1/2 tsp pepper
  • 2 tsp paprika
  • 1 tsp whole cumin
  • 1 Tbsp garam masala
  • 1 1/2 tsp turmeric powder
  • 14 oz crushed tomatoes
  • 2/3 cup water
  • 1 cup heavy cream
  • 2 Tbsp unsalted butter
  • Fresh cilantro for garnish


  • Mix yogurt, garam masala, and kosher salt. Coat chicken thighs with the marinade. Marinate for 30 minutes in the refrigerator.
  • Heat avocado oil. Sauté onion until translucent, then add ginger and garlic. Season with salt, pepper, paprika, cumin, garam masala, and turmeric.
  • Add marinated chicken. Sear until lightly browned. Pour in crushed tomatoes and water. Cover and simmer for 15-20 minutes.
