Eggs are quite a controversial food. One minute you see them on a list of the "ten best super foods” and the next you’re hearing that they’ll clog your arteries. So what’s true? Should you be boycotting eggs or eating them with every meal? Let Recipe4Living fill you in on the hard facts when it comes to eggs.

Eggs contain the nutrient choline, which can help boost your brain. By generating neurotransmitters and protecting cell membranes, choline can sharpen memory and aid in brain development. This nutrient is especially beneficial to young children, as their brains are in the early stages of development.

Lutein and zeaxanthin are carotenoids that are found in the lens of the eye. These help protect the eye from harmful UV rays, as well as diseases such as macular degeneration. Eggs contain a great deal of these carotenoids, as well. By eating eggs, you are actually protecting your eyes from diseases and harmful natural elements. In one study, people who ate eggs regularly were even less likely to develop cataracts.

Cholesterol Content

One egg yolk contains more than 200 mg of cholesterol. This means that if you eat one egg, you have consumed more than two-thirds of your day’s cholesterol. Some studies show that egg yolks contribute to an increase in your cholesterol levels. However, recent studies have suggest that consuming eggs on a regular basis does not have an adverse effect on one’s cholesterol because the body handles the cholesterol from eggs differently. Unfortunately, no final word has been made regarding this issue.

Because the jury is still out as to whether they can negatively affect your cholesterol, eat eggs in moderation; one per day should be about right. Also, try to consume them in healthy ways. For example, instead of making mayonnaise-drenched egg salad for lunch, try a delicious omelet with spinach and mushrooms instead.
